 Ingredients:

4 cups frozen pineapple chunks
1/2 cup coconut milk (full fat for creaminess, but light coconut milk can be used for a lighter version)
2 tablespoons agave milk syrup or honey (adjust according to sweetness preference)
1 teaspoon lemon juice
1 teaspoon lime juice

 .TO PREPARE PINEAPPLE:

For optimal consistency, ensure the pineapple pieces are completely frozen. 

If you’re starting with fresh pineapple, cut it into pieces and freeze it on a baking sheet before placing it in a freezer bag. 

This ensures that the pineapple pieces don’t stick together and are easier to mix.

MIX INGREDIENTS:

In a high speed blender or food processor, add the frozen pineapple chunks, coconut milk, agave syrup (or honey), lemon juice and lime juice.

Blend on high speed until the mixture becomes smooth and creamy. 

You may need to stop and scrape down the edges or use a masher to ensure an even mixture. 

If the mixture is too thick, add a little more coconut milk, but only sparingly to keep it thick and creamy.

SERVE IMMEDIATELY OR FREEZE:

Once the pineapple soft serve has reached a smooth, soft consistency, it can be served immediately for the best consistency.

If you prefer a firmer consistency, transfer the mixture to an airtight container and freeze for 1 to 2 hours, until firm enough to spoon. 

Remember that freezing makes it difficult to remove. It is therefore best to enjoy it on the  day it is prepared.

SERVING SUGGESTIONS:

Serve in bags or bowls. 

For an authentic presentation, use a piping bag fitted with a star tip to create swirls.

• Garnish with a pineapple slice or  maraschino cherry for a tropical touch.

For more sweetness, drizzle with a little honey or agave syrup if desired.
